One-handed spears

I was told that one-handed spears are possible in the game but there doesn't appear to be any option to craft it at the weapon crafting table.

I believe I have all the skills necessary to do so, however in the crafting menu it only shows spears followed by all the different long handles and spearhead type.

Is there something I've missed?

No, spears are spears. You can use spear as a two hand or equip a shield and the same spear. You either then block with the shield, or parry two handed with the spear.
